    Ercolani extra virgin olive oil

    The outstanding feature of the extra virgin olive oil of Montepulciano is a set of important factors such as the variety of the olive trees, the type of pruning, the soil, the climate, and finally the pressing. The varieties of olive trees that cover our hills are Correggiolo, Moraiolo, Leccino, Olivastra, Marino and Pendolino. The traditional pruning gives the landscape a particular feature which causes the plant a lower production but a higher quality. The present soil, mostly tuffy, and a climate with constant temperature changes give the olives unique colors, scents and flavors of the past. Finally the cold pressing, to be carried out not more than three days since the harvest,
    maintains unchanged all the qualities acquired up to that moment.

    Organic extra virgin olive oil San Camillo

    The cultivation of olives in our tradition does not necessarily needs special treatment, nevertheless organic cultivation is a simple thing to practice, so we chose to lead it in a single plot of land surrounded by woods and meadows, away from contaminations and pollutions. Here we grow in sapling 1300 olive trees in Correggiolo, Leccino, Moraiolo and Marino varieties, on a land which is mostly tuff and where the climate has a deep impact on the olives quantity and quality. For this reason , at the moment of pressing is important not only the quality but also the long-awaited performance of this organic oil, prize of such hard work. Clearly this product is different from the common extra virgin oils for the care and attention during all phases of plant cultivation and processing of olives.
